The Two-Year Build: How One Loaf Took Years to Get Right
Two years. That's how long it took to get one loaf of bread right.
I didn't start as a baker, and I'm still not one today. What I am is someone who got tired of choosing between taste and protein, and decided that was a problem worth solving myself.
**Where it started**
I've always tried to manage my protein intake without giving up the food I actually enjoy. Some days that's clean. Some days it's chicken biryani and a bit of guilt the next morning. I'm not interested in pretending otherwise — that's real life.
What I noticed was that bread never seemed to fit into that balance. Either it was just carbs dressed up as a meal, or the "protein" versions tasted like something you'd eat out of obligation, not enjoyment. I checked everywhere — Instagram, Google, every brand I could find across India, including the protein bread coming out of Bangalore.
But the Bangalore brands couldn't reach me. They weren't serviceable in Vizag, in Visakhapatnam, in Andhra Pradesh at all. So I started tasting protein bread from different states, wherever I could get my hands on it, and realized two things at once: nobody was serving this region, and even what existed elsewhere could be better.
That's when I thought — we can build something out of nowhere, right here.
So I decided to build it.
**Where it got hard**
I come from business, not food science. BBA, years of sales experience, pitching products across every format — online meetings, offline meets, cold pitches. I know how to convince someone a product is good. I had no idea how to actually make one.
So I found a consultant who did. We researched across India together, testing formulations, sending samples to labs, adjusting, testing again. Two years of getting it wrong before getting it right. Not two years of certainty — two years of actually doing the work, including the parts that didn't work the first time.
**What it taught me**
The recipe wasn't the hard part, looking back. The hard part was sticking with something for two years before it was ready to put my name on.
That's the same idea Cadieux is built around now. Strength isn't one big moment. It's two years of small, unglamorous steps that nobody sees until the loaf is finally on the shelf.
**Where it's going**
Every product we build from here follows the same rule: taste and strength, together, no compromise on either. That was true for the first loaf. It'll be true for whatever comes next.
