A long shelf life sounds like a benefit. For most bread, it's actually a warning sign.

The longer a loaf can sit on a shelf, the more it's been built to survive sitting on a shelf — not to be eaten fresh. That usually means preservatives, denser packaging, and a recipe designed around a warehouse, not a kitchen.

When we built Cadieux, we made the opposite choice on purpose. Shorter shelf life. Less buffer. More pressure on us to get the bread to you while it's still at its best.

That's a harder business decision than it sounds. A longer shelf life means less waste, more flexibility, easier logistics. We chose the harder version because the alternative was selling you something that calls itself fresh but isn't, not really.

This is the same idea behind everything else we've built. Bake close to delivery, not weeks ahead. Reach you fast, not eventually. Let the bread's actual freshness be the selling point, not a number printed on the wrapper.

It's a smaller margin for error. We think it's the right one.
